The Lights Go Down: Valentine's Day at The Salty Zebra
Forget the roses. Skip the chocolates. This Valentine's Day, you're not doing dinner. You're doing the dark.
On February 14th, we black out the windows. Every overhead dims to near-zero. Every table glows with candlelight. This isn't a gimmick. It's focus.
What Happens When the Lights Go Out
Picture this: You walk in. The room is quiet. Not awkward quiet—intentional quiet. Lo-fi beats beneath conversation. The candlelight flickers. And then it begins.
Course One: Wianno Oyster
A single oyster. Caviar crowning it. Passionfruit mignonette cutting through the brine. It's briny, bright, and gone in seconds. You're already paying attention.
Course Two: Surf & Turf Roll
Chef Michael Luth doesn't do surf & turf like your uncle's steakhouse. This is spicy lobster salad layered with shaved Chatel Farms ribeye. Cucumber. Asparagus. Spicy aioli. It's a roll that makes you forget sushi exists.
Course Three: Ravioli Doppio
Black truffle ricotta. Fennel sausage. Black truffle cream with sage. Two pillows of hand-rolled pasta that land on your palate like velvet. Chef Michael makes this in-house. No shortcuts. No frozen packets. Just hands, flour, and obsession.
Course Four: Chatel Farms Prime Filet & Foie Gras
The main event. Chatel Farms heritage beef—buttery, rich, the kind of steak that makes you close your eyes. Seared foie gras on top. Pommes Robuchon underneath. Charred Kai Kai Farms broccolini on the side. Lobster nage pooling around it all. This is the plate that ends conversations mid-sentence.
Course Five: Death by Chocolate
Five layers. No apologies. Chocolate pots de crème. Milk chocolate espresso. Dark chocolate ganache. Cocoa tuile. Cherry emulsion for the finish. It's called Death by Chocolate because you won't want to leave the table.
Why the Dark?
Here's the thing about Valentine's Day in Jupiter and Tequesta: It's become predictable. Same spots. Same vibe. Same noise.
We stripped it back.
No distractions. No TVs. No harsh overhead lights. Just you, the person across from you, and five courses that demand your attention. Chef Michael and his team treat every plate with the intensity of a Michelin inspection. You bring the person who matters.
The Salty Zebra is not a loud restaurant. On this night, it becomes a quiet one.

Local Sourcing, Because That's What We Do
This isn't generic fine dining. Chef Michael sources from the farms you've probably driven past. Chatel Farms for the beef—heritage cattle, buttery finish. Kai Kai Farms for the broccolini—mineral-rich, crisp. It's Florida on the plate. Jupiter pride in every bite.
